The Mojito is one of the absolute classics - flavoured with lime, mint and sugar - this sweet but little bit fizzy drink is the perfect holiday companion. Just one sip of this delicious concoction can bring back memories of lazy beach days under a palm tree with the sun warming your skin and the sea cooling your toes. Mojito’s are quite dangerous though - with the added ingredients overpowering the rum, it can almost feel like it’s not got alcohol in - so you have to be careful. Made using Rowse Honey, this naturally sweetened version adds a luscious candied twist on the fresh traditional. Keeping the rest of the method and ingredients almost identical to the original this truly is a simple swap you can make with zero effort. Simplicity at its best.
5-6 Mint Leaves
1 Lime - Cut into 6 Wedges
2tbsp of Rowse Runny Honey
42ml White Rum
1/2 Cup Soda
Ice Cubes
Method:
1. Place mint leaves and 3 lime wedges into a glass. Crush together to release the mint oils and lime juice.
2. Add 2 more lime wedges and the honey and mix again.
3. Fill a cocktail glass with ice cubes, the more the better!
4. Pour the rum over the ice and top up with soda
5. Stir, taste and add more honey if needed.
6. Garnish with the last lime wedge.
Bacardí Pomegranate Mojito

50ml Bacardï Carta Blanca Rum
20ml Liber & Co. Pomegranate Syrup
15ml Fresh Lime Juice
25ml Soda
8-10 Mint Leaves
Pomegranate Seeds
Method:
1. Grab a whole lime and cut into wedges. Squeeze all into the glass. Add Liber & Co Pomegranate Syrup.

Method:
1. Add the LoneWolf Cactus & Lime, sugar syrup and fresh lime juice to a tall glass.
2. Put a little crush ice a 1/3 of the way up the glass.
3. Add 5 or so fresh mint leaves, hitting them between your palms to release their aromatic oils.
4. Stir them through the drink and top with more crushed ice and a splash of soda water.
5. Garnish with mint sprigs, again hitting between your palms to release the aromas.

50ml White Rum
30ml Polo Mint Syrup
6 Lime Wedges
50ml Soda
Method:
1. Make your polo mint syrup by combing 1x pack of Polo Mints with 100ml of sugar syrup (For the sugar syrup: In a saucepan add 100ml sugar to 100ml of hot water from the kettle, gently simmer until all the sugar has dissolved. Let it cool) in a saucepan. Let the mixture simmer until the mints have dissolved. Let the syrup cool and store in a bottle or jar
2. Muddle the lime wedges in the bottom of a Collins glass
3. Add the Polo Mint syrup and rum
4. Fill the glass with cubed ice and stir, top with soda
5. Garnish with a Polo Mint and a sprig of mint
